Jaegerschnitzel

I love German food, and Schnitzel was an absolute favorite when we lived in Germany. This is my own version of Jaegerschnitzel.

Rainbow

Tonight there was a beautiful double rainbow after some much-needed rain!

I hope to see lots of more rainbows, and plenty of more rain to wash away the rest of the snow that still remains from winter.

Hawaii Here I Come!

I have officially been selected to represent Army Families at the mid-level Army Family Action Plan Conference for the Pacific Region. And where is the headquarters of the Pacific Region?

HAWAII!!!!

(Images Source: Bing Images)

I've never been there, so I am a little excited. I know this is for a conference and most of my time will be taken up with that, but hopefully I'll be able to do some site-seeing an evening or two after the "work" is done.

I've never been on a trip by myself before...other than when I left home for the army so many years ago.

What will this Mom do?!

Item #1 is to sew my camera protecting insert for my purse, so I can carry my camera safely, and not need my camera bag...because you KNOW that my camera will not leave my side the whole time I am there!

The Things that You See on a Walk

Last night after dinner, the kiddos and I went on a walk through some nearby woods. For well over half a mile of the walk "in" we were trailing a huge fox who would trot along the path, stop and look at us, and keep trotting. A couple times he or she just stopped, sat down, and stared at us. He'd watch us 'til we got too close, and then start trotting up the trail again. At one point I stopped and snapped this picture of his track. That's a good-sized fox!

It's the Little Things

At 11:17 PM I was placing a batch of Lemon Scones in the oven.

The Tale of the "Twitterpated" Tundra Swans

The other day I was on my way home from the commissary, and as I crossed the bridge, I saw a whole bunch of Tundra Swans. I had seen my first two of the year on Monday (as well as my first geese of the year), but with all that I saw today I just had to stop and take some pictures.

Tundra Swans

Yesterday I drove over to the nearby bridge at the Chena River, and saw a pair of beautiful Tundra Swans.

Cooking 101 Video: How to Easily Slice a Head of Cabbage

Here's my very first "how to" video for my Cooking 101 series.

I've seen some people have trouble cutting up cabbage, but with a couple simple tips, it is very easy! No special equipment needed.

In the video, I cut up a head of red cabbage - which was good because you can see the details of the cabbage - but red cabbage is much more firm in comparison to regular green cabbage. It also takes longer to soften when making coleslaw, so if you use it for that, be sure to allow more time for it to chill.

Military Monday Week 3: Linky Party! - The Order of the Yellow Garter

"Give me the greatness of heart to see,
The difference between duty and his love for me.
Give me the understanding so that I may know,
When duty calls him, he must go.
Give me a task to do each day,
To fill the time when he's away.
When he's in a foreign land,
Keep him safe in your loving hand."

The Cavalry has a tradition of the Yellow Garter, like the one you see above.

In the 1700-1800's the lovely ladies of Cav Troopers would wear a yellow ribbon or scarf on their arm, parasol, hat, etc. to show that they were waiting for their soldier to return from protecting the wagon trains.
