Science in the Summer

Raspberry (or Any Berry) Fool
Last week, I shared a recipe with you for a Lemon Fool, and when I did, I mentioned making berry fools. Well, here is a Raspberry one. Using this recipe, you can make this with any berries...pick your favorite!

At the Campsite
After hiking on Angel Rock Trail, we enjoyed some time at the river where we camped.
There was a small section where we had to wade across a waterway to get to the actual shore of the river. Rubber boots came in handy here. Joshua dramatically made a big deal about not having his hat on in the picture.

Shells with Chicken & Pancetta
Here is a very simple pasta dish to please the family. Because you can be "chopping" while other parts are cooking, this meal only takes about 30 minutes or so to complete.

The Hike Down
After enjoying some amazing views on our hike, we enjoyed the trip back down.
One of the really cool things, was a waterfall/spring that was flowing down the mountain...still under a layer of snow!

It is almost needless to say, that you can find natural beauty all around up here - after all, this is Alaska. But over the weekend, we went on a mini camping trip, and made a point of visiting a special place called "Angel Rock Trail."

The Chatanika
One of our favorite places to go on an afternoon is the Chatanika River. It is just a few miles out of town and very peaceful and pretty.

Buttery Sweet Frosting
This is the frosting that you see on the Classic Yellow Cake.

I will warn you though, this is quite sweet! You'll want a glass of milk to wash it down! This frosting is similar to the kind you would find on store-bought cakes. VERY sweet...something I save for special occasions.

Classic Yellow Cake
I really hate mixes....I have always thought that it was "cheating." Cake mixes were probably the last mixes I gave up as I learned how to cook from scratch, because they were just so easy! This recipe is for a classic yellow cake. You can use it for anything you would use yellow cake for. Makes great cupcakes too! (And knowing what you are eating is always a plus!)

Biking Around Fairbanks
This evening, we headed out around 8pm for a bike ride around Fairbanks. I was traveling light, so I didn't have my "real" camera with me, but I did have my phone. So this post will be all "phone pics."
