Carolina Barbecue Sauce & Pulled Prok

If you like the vinegar-based Carolina-style barbecue sauce, you will love this. I make the base recipe, and then divide it in half for a "Momma" and "Daddy" version....




As I type this, I have a huge pork roast cooking away in my crockpot. I'll let it cook all night, and tomorrow this sauce will help create some uber-yummy Carolina Pulled Pork.

In a saucepan, combine all of these...

1 cup traditional Yellow Mustard


1/2 cup Sugar and 1/4 cup Brown Sugar


3/4 cup Apple Cider Vinegar


1/4 cup Water


And 2 Tablespoons Chili Powder, 1/8 teaspoon Cayenne Pepper, and 1 teasponn black or tri-colored Pepper.




Mix it all together, bring it to a gentle boil, then reduce the heat and let it simmer on very low for 25 minutes.


As it cooks, the color deepens into a lovely rich orangey shade.


Now add in 2 Tablespoons butter, 1 teaspoon Soy sauce, and 1 Tablespoon "Liquid Smoke." (You can usually find it near the Worchestershire sauce at the store.)


Let it cook for 5 more minutes.

Now at this point, I pour half of it into a jar, and leave the other half in the pan. To that I add these beauties.....2 dried, whole cayenne peppers.


I let it simmer together for an additional 5 minutes, and let it cool.

When both versions are cool, I put them in these handy little bottles and stick them in the fridge overnight. The flavor develops further as it sits, and the next day, you have a very happy Carolina sauce!
