
This soup is so easy to make, it is perfect for a mid-week meal.
In a Dutch oven, melt 3 Tablespoons of butter.

Add in 3 Tablespoons of finely chopped red onion, and saute until the onions are tender.

Meanwhile pulse an entire head of broccoli in a food processor, minus the woody stem.

When the onions are tender, whisk in 2 Tablespoons of flour.

And then whisk in 2 cups Beef Broth

3 cups of Whole Milk

and 1 cup Half & Half

Add to it, about a teaspoon each of Salt & Pepper.

Bring this all to a gentle boil, stirring often. Add in the Broccoli.

Let the Broccoli cook for about 5 minutes, then add in 3 cups of cubed or shredded cheese. I used half sharp Cheddar and half white Cheddar, but you can use whatever cheeses you like best with Broccoli.

Stir and cook the soup until the cheeses are completely melted.
