And this is what I came up with! It is dark and rich. It reminds me of a Starbucks Mocha in a pie crust!

This pie uses mostly very basic ingredients, with one special addition...I'll get to that in a minute.

For starters, you are going to need 1 - 9 inch pie shell that is baked. Use your favorite basic pie crust recipe.
Then you need to separate 2 eggs.

I don't know why people get so nervous about separating eggs. It is ridiculously easy, and you don't have to buy any gadgets to do so. Break your egg, gently pour it into your hand, and let the whites run through your fingers. Done!

Beat your egg yolks, and then set them aside.

In a medium saucepan, you are going to combine 1/2 cup Baking Cocoa, 1 cup Sugar, 1/2 teaspoon Salt and 3 Tablespoons Corn Starch.

Stir it all together, and add 2 cups milk (I use whole milk)

Stir this all up, and then you are going to cook this over medium heat, stirring continually. Bring it to a boil, and cook and stir it for 1 minute.

Remove the hot deliciousness from the heat.

Now you are going to slowly ladle some of the hot mixture into your eggs, while whisking the eggs the whole time. This is call "tempering" your eggs. So you can put your eggs into the saucepan without having instant scrambled eggs.


When it is all combined, pour this mixture back into the saucepan.

Return the saucepan to the heat, and bring it to a boil once again. Again, letting it boil and stir for one more minute. Then remove it from the heat again.

Here's where it really starts getting good.
Add in 2 teaspoons Instant Coffee

1 teaspoon Vanilla

1 Tablespoon Butter

Mmmmm....butter....

and that special ingredient... 2 Tablespoons "Bailey's Irish Cream with a hint of Coffee"

Oh yeah baby!

Gently stir this all together until the butter is completely melted in.

Pour the heavenly mixture into your baked pie shell. Get it all, using a rubber spatula to scrap the pan, and then smooth the top of the pie.

Now this step is very important.
Hold up your rubber spatula.
Close eyes.
Lick spatula.
Release deep, soul-cleansing sigh.
Swoon.
Repeat.
Oh, I'm sorry....I got side tracked.
Okay, now for the very important part. Allow the pie to come to room temperature, then place it in your refrigerator and allow it to chill for about 3 or more hours.

After your pie has chilled, serve it with a little bit of whipped cream.

Or a little more whipped cream

Either way...just enjoy!
