Sometimes you come up with a dish....and you simply have no idea what to call it. I decided to call this "Chicken Chatanika" - named after the river that I love to spend time at. I thought it had a nice ring to it.

Soppressata Puffs

Tonight I tried a recipe that I saw on Foodnetwork recently. All I call say is OH. EM. GEE!!!! Ridiculously simple, and insanely delicious!

Soppressata + Gruyere + Puff pastry. You'll die.

Aurora and a little Announcement!

Last week, the Aurora gave another nice display, and since it was not negative 41 degrees, I decided to go out and take a few photos.

The other day, I was on facebook, and I mentioned that on my list of things to do that day, was the chore of driving to North Pole to go to a pharmacy to pick up a ridiculously expensive medication for Hickory.

A friend from school commented, chuckling, that I was driving to the North Pole.

So I took this picture for her.

Maple Walnut Pie

This pie is a nod to the traditional Pecan pie, with a bit of a difference. It uses Walnuts instead of Pecans, and Maple Syrup instead of Karo. The results are delicious!

Another Birthday

The end of November marks a very busy week for us. We have two birthdays and Thanksgiving normally within a week's time. The most recent was my daughter's birthday.

How was Your Thanksgiving?

Ours Thanksgiving was small and cozy. Just me and my kiddos. I didn't go overboard with the cooking...Turkey, Stuffing, Corn Casserole, Sweet Potato Casserole, Green Bean Casserole, Mashed Potatoes, Gravy, Rolls. Oh, and a Pumpkin Pie and a Maple Pecan Pie.

Full Circle - Organic Produce Delivery

A few weeks ago, I was contacted by Full Circle to do a write-up about their Organic Produce delivery service. They were going to give me a credit to open an account with them. I was thrilled to do this, because I had been planning on looking into their service anyways! Being up here in Fairbanks, Alaska, it is often challenging to find fresh organic produce.

So yesterday I received my first box...and it was like my birthday!

Winter has Set in Early!

This week, winter has come in with a vengeance!

This fog you see there in this picture, is actually "ice fog." Instead of water vapor, it is crystals of ice...and it isn't very pleasant to breathe in.


And if you were wondering.....this morning we hit this temperature.....a MONTH before we saw it last year. I have a feeling we are in for a VERY cold one this year!



Oh, and that high? We never even got 10 degrees below that today.

A Very Special Video

I don't post youtube videos on here often, but this one is very special to me. It is the 82d Airborne Chorus singing my favorite song, at Ground Zero.

The lead singer of this song, is Chris Stout. Husband, and father of three girls. He was killed in Aghanistan in 2010. I knew Chris and his family from my church there in NC. He was a gifted singer, and is no doubt, singing in the presence of our Lord today.

Yesterday I was coming home and saw something run across the road. At first I thought it was a dog, because of its size, but as I got closer, realized it was a large fox!

Kitchen Remodel....Army Wife Style

Something you learn, being an army wife, is to get creative when it comes to ways to decorate your home. What you do has to be temporary, because you are likely to be living in military housing, or renting.

Years ago, when we lived in Germany, I learned a trick from my neighbor. I mentioned this back when we moved here last year....and if you forgot the hideous institutional PINK kitchen counters I have....well...you are about to see them again.

I decided it was time for a change...the green was about to go, as it was starting to show some wear.
