Cranberry-Orange Pork Roast

This is such a great Autumn meal. It combines the tangy flavor of cranberry with the sweetness of orange. It is also super, super simple.

To start, you want a pork roast. This was a boneless loin roast. Salt & pepper it, and put it in a roasting pan with a rack. Bake it for about 45 minutes at 325.

Meanwhile take one 14 ounce can of jellied cranberry sauce. You know the stuff.
Spoon it into a small sauce pan.

Add 1 cup of orange juice.

and 1/2 cup brown sugar.

Now slowly begin melting it together until it is smooth.

After about 45 minutes, pull out the roast and brush some of the glaze mixture over the roast. Put it back in the oven.

Repeat this every 10-15 minutes or until a meat thermometer in the center of the roast measures 170 degrees.

This is the result.

Let the roast rest about 15 minutes, and then slice it up.

Serve with the remaining glaze spooned over the top.
