This recipe is another one that I make a lot by request. We always call it "The good chocolate cake." I have made it twice in the last couple weeks. Once for a get-together, and then again for a friend's BBQ. My youngest was very upset because the whole first cake was eaten, and he never got a slice. (But taking home an empty platter is always nice!) So I had to repeat the baking
"The Good Chocolate Cake"
3 eggs
2 c sugar
6 Tb baking cocoa
3 c flour
1 tsp salt
2 tsp baking soda
1 c butter or margarine (I use real butter)
1 c buttermilk (I use the vinegar/lemon juice and milk mention in the Cinnamon Bread recipe)
1 c hot coffee
2 tp vanilla
Preheat oven at 350ยบ
Combine all ingredients, mix until smooth. Pour into a prepared Bundt cake pan (I always use the "Pan-ease" mixture which you can find here) and bake for 45 minutes, or until toothpick inserted in center comes out clean. Cool in the pan for about 5 minutes, and invert onto a cooling rack. If the cake doesn't fall out immediately, allow it to cool inverted for about 5 more minutes, and give it a gentle shake. It should come right out.
Top with your favorite icing/frosting! We have used chocolate, dark chocolate, butter...all were yummy!
